Healthy Purple Foods


PENNSYLVANIA—A recent study conducted at the University of Scranton and presented at a meeting of the American Chemical Society found that purple potatoes could help lower blood pressure.
It is noted that purple potatoes taste just like white or gold potatoes, and they are low in calories, and high in fiber, B vitamins, and vitamin C. They are also packed with antioxidants known as polyphenols that help prevent heart disease.
The study included 18 participants who ate small purple potatoes (about the size of a golf ball) twice a day for 30 days.
The team found that on average the groups’ diastolic (bottom number) blood pressure dropped 4.3 percent and the groups systolic (top number) blood pressure dropped on average 3.5 percent.
According to Joe Vinson, Ph.D:
“Mention ‘potato’ and people think fattening, high-carbs, empty calories. In reality, when prepared without frying and served without butter, margarine or sour cream, one potato has only 110 calories and dozens of healthful phytochemicals and vitamins. We hope our research helps to remake the potato’s popular nutritional image.”
